  • Dough: Provides strong, consistent gas production and fermentation stability. No need for pre-dissolving; mixes directly with dry ingredients. Tolerates a wide range of temperatures and process conditions.
  • Final Product: Ensures a consistent, predictable rise and enhances the development of aromatic notes in the crumb for a traditional, artisan flavor profile.

Dosage: Typically 0.8% – 1.0% of flour weight.

Storage Conditions: Store in a cool (below 25°C/77°F), dry place. To be able to re-use the already-opened packs without causing any loss of activity, it is recommended to seal them tightly and keep them in a cold environment.

Application: 

Ideal for traditional breads, baguettes, crusty sandwich breads, rolls, croissants, continental-style breads, focaccia, steam buns, Middle Eastern flatbreads (e.g., pitta, lavash), multi-grain, rye, and par-baked breads, and pizza bases.
