Product Description: An all-purpose soft bread improver focused on creating ultra-soft texture, high volume, and exceptional moisture retention for packaged breads and buns. A rich improver formulated for high-sugar, high-fat doughs. It balances sweetness, promotes a tender crumb, and ensures beautiful browning.

Properties:

  • Dough:Improves dough stability, gas retention, and machineability. Strengthens the gluten network to support heavy additions of sugar, butter, and dairy.
  • Final Product: Guarantees a soft, uniform, and fine crumb, improved volume & shape, and superior moisture retention for longer freshness. In sweet goods Creates a rich, tender, and fluffy crumb, enhances the sweetness balance, and improves the Maillard reaction for perfect browning.

Application: In enriched doughs for hamburger buns, hot dog buns, pullman loaf (toast bread), sandwich bread, and milk bread rolls. In heavily enriched and sweet doughs for Brioche, Challah, Milk Breads (Pain au lait, Milchbrötchen, Shokupan, etc.), sweet rolls and buns.

Recommended Storage Conditions: Store in a cool (below 25°C/77°F), dry place, away from direct sunlight and strong odors. Keep the bag tightly sealed after opening to prevent moisture absorption and contamination.
